Cheesy Onion Toast

I had a novel breakfast idea this morning which turned out to be pretty yummy. It was also a big hit with the over-90 crowd:

Ingredients

Method

  1. Pre-heat the oven to broil.
  2. Pre-heat your skillet on the stove-top to medium high.
  3. Slice on the diagonal as many servings of bread as you would like.
  4. Finely grate 3–4 Tablespoons of Parmesan and mozzarella cheese per slice and evenly arrange atop the bread slices.
  5. Slice several paper-thin slices of onion for each piece of bread and layer these atop the cheese.
  6. Sprinkle the slices liberally with Penzey’s Justice spice blend.
  7. Cut one slice of American cheese into pieces and arrange to cover the onion/spice/cheese layers below and carefully arrange in a cast iron skillet.
  8. Broil the slices for 4 minutes until perfectly browned (see photos).
  9. Serve alone or accompanied with fresh fruit and coffee for breakfast or French Onion Soup for…
