Pot Stickers in 5 Easy Steps

Jaiozi ( 餃子), Gyoza (ギョーザ), or just call them dumplings — pan fried & steamed

My friend, Eddie H., wanted to make some Chinese pot stickers . . . and so we did. You can too, a big batch in fact, and then freeze them for a rainy day. These dumplings are easy to make at home; fun even, if you have some reasonably talented kids around to help.

Yield: about 32 pieces

Part I: Wonton Dough

You can use this dough to make dumplings, egg rolls, wontons, ravioli, etc. I cheated in the images below, using regular Pillsbury flour instead of the unbleached kind.

Ingredients:

  • 2 cups (250g) unbleached, all-purpose flour
  • 1 egg
  • ¾ (5.7g) tsp salt
  • ½ (120ml) cup water
  • cornstarch (for rolling)

Method:

  1. Whisk the egg, salt and water together in a bowl.
  2. In another bowl, whisk the flower to sift it, creating a deep impression in the center of the flour.
